BBQ Time - Cornish Game Hens over hickory and apple wood

Well after sitting on the porch for a few weeks, we finally were able to fire up the grill for the first time. We had a couple of cornish game hens that we wanted to throw onto the rotisserie over some charcoal, hickory and apple wood. We made a marinade with:

1 tsp onion powder
1 tsp gatlic powder
1 tsp ground dried lemon peel
1/2 tsp each black, green and white pepper corns
1 bay leaf
3 cloves
1/2 tsp chili flakes
1 tsp mustard seeds
1 tsp salt
2 tsp dried oregano
1 tsp dried thyme
1/2 tsp ground sage
2 tbsp oil
1 lemon, halved
2 cornish game hens

Toast and then grind the whole spices. Mix together with the oil and the other spices to form a paste. Rub onto the game hens (or any other poultry) and marinate for an hour or so covered. Stuff the half a lemon inside each bird then cook on a rotisserie over a medium fire (with some woodchips if you wish). Cook until a thermometer reads 75C in the thick part of the thigh. Remove, wrap in foil and rest for at least 15 mins before serving.

L: "So do you think we can do this?"
J: "It might be worth a try."

L: "We want to use the rotisserie, but I haven't put it together yet."
J: "That should be easy. We just need a screwdriver, pliers, bolts, nuts... "
L: "OK."
J: "Er, where's the extension cord or batteries?"
L: "We can just improvise and use these batteries. D'oh! They don't fit, we'll have to walk to Walmart. We'll just get the coals going before we go."

J: "OK, where are the matches?"
L: "D'oh! We don't have any! We'll have to leave the BBQ lonely in the cold while we go."

L: "Extension cord, lighter and more coal, just in case."
J: "Cool, self checkout."

L: "Gem, can you please get us a beer?"
G: "Sure, even though it is about 8 degrees centigrade, you can't have a BBQ without beer!"

L: "Beer and fire: now we're cooking!"

J: "I'll just stick this in here, and the wing in there, and then spike that. Hmm, this feels familiar... but somehow small." (see first post...)

L: "Ready, set, roast!"
J: "Those woodchips will smoke these cornish game hens nicely."

J: "Just let me have a little try..."
L: "Feed the man meat!"

L: "I think they need to be cut up first."
G: "They got very black."
L: "That's just the smoke effect."

G: "Yum!"
L: "YUM!"
J: "YUMMMMM!!!!! I... must... stop... eating...!"
