Chile rellenos with two types of chile stuffed with refried beans.
We covered them with cheese and baked them rather than fry them for ease.
We made a tomato, onion, yellow capsicum and coriander salsa and guacamole.
Also a tomatillo fried onion and garlic salsa with coriander added at the end.
This was the spread we ended up with.
Of course there was too much food, but everyone had a great time. The fireworks are completely legal over here, so this is one we bought from the Mexican market.
At the end when there were only a few people left, we lit the fire and toasted marshmallows. S'more were a bit too much on a full stomach. Of course we went through a fair bit of beer and many margheritas. We felt fine in the morning. I hope everyone else did too.
