The Tamales

Once again the meat filling had to be made. A loin of pork was poached with some spices, then shredded. The sauce is basically beer, spices and masa harina (changed corn flour).
It was a bit of a production line to put the tamales together. I separated the soaked corn husks, Llew made balls of the masa, Robin put them together and I tied them up.
First the masa is spread on the corn husk.
Then some of the filling is put in the middle.
The corn husk is used to fold up the masa
into a nice parcel.
They are wrapped in the corn husk and tied with a strip of the husk.
They are then steamed.
Ta da! The number of strings indicates the filling. Along with the pork, we had sweet potato, and potato and cheese.
